‘The Baron of Beef’

The Baron of Beef is alleged to have originated when Henry VIII was served a spit roasted double sirloin of beef roast and was so taken by the roast that he dubbed it ‘Sir Loin, the Baron of Beef’. Whether this is true or not, this term in Britain has come to refer to a major mass of beef.

 We are pioneers in roasting huge joints of beef. We call them our ‘Baron of Beef’ roasts and can be anything from a 10lb sirloin to a 200lb hind quarter – a real Henry Vlll feast!”

The beef roast rare/native breeds that we supply produce the most fantastic flavoured beef. This is due to traditional farming methods, compassionate animal husbandry and the ageing process. They are all rare or traditional breeds, with the majority being Longhorn, Shorthorn, Belted Galloway, Dexter, Aberdeen Angus, Hereford and Red Poll.

These breeds take longer to mature, and require extensive farming. However, the marbling this produces in the meat and the flavours on the palate are well worth the effort! They have a grass-based diet, which is what cattle have traditionally consumed for centuries. The beef is dry aged in a purpose built ageing room with Himalayan rock salt, giving excellent texture and depth of flavour.

Beef Roast

 

Our Baron of Beef, would depend upon the number of guests that require feeding and your budget. We can supply a variety of cuts and sizes for any event or occasion, from a small house party to large wedding or corporate event. Depending upon the number of your guests and your budget, we will recommend from the following cuts.

1 Sirloin of Beef

Comprises of 1 whole striploin. Average weight: 30lbs

2 Choice of Beef without Flank (rump and loin)

Comprises of 1 whole striploin, 1 whole fillet, 1 full rump or Hip Bone of Beef. Average weight: 60lbs

 3 Choice of Beef with Flank

Comprises of 1 whole striploin, 1 whole fillet, 1 full rump or Hip Bone of Beef and the flank (the belly muscle) Average weight: 80lbs

4 Top of Beef

Comprises of 1 whole topside, 1 whole silverside 1 thick flank and 1 shin of beef. Average weight: 100lbs

5 Top and Rump

Comprises of 1 whole topside, 1 whole silverside, 1 thick flank, 1 shin of beef, a rump and the thick end of the fillet. Average weight: 140lbs

6 The Hind

Comprises of 1 whole striploin, 1 whole fillet, 1 full rump or Hip Bone of Beef and the flank (the belly muscle),1 whole topside, 1 whole silverside, 1 thick flank and 1 shin of beef.  Average weight: 200lbs

Hog and Beef

A whole outdoor reared hog with our unique ‘Baron of Beef’. Succulent slices of aged beef and ‘pulled’ pork served with fresh or rustic rolls, stuffing, lots of crackling with apple and horseradish sauces.

Hog and Lamb

Beef and Turkey

Slices of succulent roast beef in a thick red wine gravy together with tender free range turkey slices in a traditional gravy. Served with fresh or rustic rolls, apple and cranberry sauces.

Please note that whole hogs are only available when they are supplied for a minimum of 80 guests. Smaller number of guests may still have a Combo, but with different cuts of meat. We can supply different meat combinations to those shown above.Please ask us for details and a quotation.

Lamb Roasts

 One of the holy trinity of traditional British roasts

After beef and pork, what meat eater cannot resist the wonderful aroma and succulent sweet taste of roast lamb. We use whole lambs or lamb hinds, slow roasted with their best friends, Rosemary and Garlic, they make the perfect main course for your special occasion. Served hot in the rustic way, with or without Rosemary infused gravy in a soft bread roll – or you might like to try the Northern way, with mushy peas and mint sauce.

Please note that an average size lamb of around 20kg – 25kg will feed between 30 to 40 people
giving reasonable size portions.
